Do you get fed up with trying to find a different dish for dinner, when your family are just so difficult to please? Join the club! This is a very common complaint up and down the country and one that usually sees the cook giving up and resorting to those safe and boring old favourites. Perhaps it’s time for you to check out some popular recipes with chicken for inspiration. After all, this is a meat that is usually most preferred by people.
Of course, most families will prepare roast chicken at least a couple of times per month, but there are actually many other popular recipes with chicken that you can look at. For example, how about an easy chicken and bacon pasta bake? This proves to be a definite hit with kids and should quell those moans and groans for a good dinnertime.
You might even like to think about a chicken and pineapple version of shepherd’s pie – this always goes down really well in my house. All you do here is cube some chicken breasts, slice some pineapples and dice some onions and fry these in a wok with a little sunflower oil. Next, add some creamy white wine sauce; then cover with a layer of buttery mashed potato. Place this in the oven on 200 degrees Celsius for around 45 minutes and this is one quick and simple meal that is usually very well received.
In the winter time, there is nothing better than a hearty chicken stew and this can be made with cubed chicken breasts or even the leftovers of your roast from the day before. Add plenty of vegetables to the pan, the chicken and water and a stock cube should be added for extra flavour and kick in the stew.
If you want to go French for a day, why not look at delicious coq-au-vin? This is more especially popular with the adults and is simply chicken in a red wine sauce. This can be made in a matter of minutes and then placed in the oven to cook on a low temperature.
