Whether chocolate, lemon drizzle or the classic Victoria, there’s a sponge cake for everyone. Sponge cakes can be made using the creaming method, the whisking method or by adding the cake ingredients to the batter in stages. Flour, eggs, fat and sugar are combined and baked to form a light, porous cake, often with two layers separated by a sweet filling.

There is many a sponge cake recipe out there on the internet – finding one that you like the sound of isn’t the difficult bit – but more getting the technique down to where you are confident that your creation will come out as intended!

Take time to take a look around online or through your favourite bakery books – Mary Berry and Lorraine Pascale are great – and have a go at making something that you and the whole family can enjoy.

For more info on different recipes and techniques, the Stork website is great too.
